This white chicken and cauliflower soup has a silky, velvety base that feels genuinely indulgent yet is completely clean. A splash of coconut milk rounds it out without making it taste tropical. 

It satisfies that comfort-food craving in a way most light soups just don’t.

Paleo White Chicken and Cauliflower Soup

A silky, dairy-free soup with a blended cauliflower base, shredded chicken, and coconut milk, rich in texture, clean in ingredients, and ready in 35 minutes.

Total Time: 35 minutes 

Ingredients

  • 2 cups cooked, shredded chicken breast
  • 1 large head of cauliflower, chopped
  • 5 cups chicken bone broth
  • 1/2 cup full-fat coconut milk
  • 4 cloves of garlic
  • 1 medium yellow onion
  • 1 sprig fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Step 1: Sauté the Base

Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic and cook for 3 minutes until completely softened and fragrant.

Don’t rush this step; these aromatics form the entire flavor foundation that carries the finished soup.

Step 2: Simmer the Cauliflower

Add the chopped cauliflower florets, bone broth, and rosemary sprig to the pot. 

Bring everything to a boil, then reduce the heat and simmer for 20 minutes, until the cauliflower is completely tender and breaks apart easily when pressed with a spoon.

Step 3: Blend Until Smooth

Remove the rosemary sprig and use an immersion blender to blend the soup until completely smooth and velvety throughout.

Step 4: Add Chicken and Finish

Stir in the full-fat coconut milk and shredded chicken. Simmer for 5 more minutes until everything is evenly heated through and the broth is rich and creamy. 

Season well with salt and pepper and serve hot immediately.
